Follow these simple steps to create the prefect portable snack, and with kale as an ingredient you’ll be sure to get a fit foodie stamp of approval. :)


  • 160g unsalted butter or coconut oil
  • 150g light brown sugar or coconut palm sugar
  • 100ml best quality maple syrup
  • 360g rolled oats
  • 200g raisins
  • 200g sunflower seeds
  • 400g pumpkin seeds
  • 200g sesame seeds
  • A handful or to your liking of blanched kale



  1. Preheat oven to 150c/gas mark 2. Line a 9” by 12” baking tin with parchment paper
  2. Heat the butter, sugar and maple syrup mixing till combined
  3. In a large bowl add everything else and pouring in butter mix fold everything together
  4. Tip into prepared tin and press to flatten with fingertips, spoons, spatulas or palette knives
  5. Bake for 20mins loosely covered in foil and then uncovered for a further 10mins
  6. Allow to set and cut as you wish. Rectangular bars are standard but pointed slices are ever so fun! :)
